These energy bites have a rich chocolate flavor with a peanut butter crunch. Heart healthy flaxseed meal and oats provide a nutritional boost to these sweet treats.


Ingredients:

  • 1/2 cup crunchy peanut butter

  • 1/3 cup honey or maple syrup

  • 4 tablespoons warm water

  • 3 tablespoons 100% cocoa powder

  • 1/2 teaspoon vanilla

  • 1 cup rolled oats or oat flour

  • 1/2 cup ground flaxseed meal

  • 3 tablespoons of chocolate chips


Directions:

Mix melted peanut butter, liquid sweetener, cocoa powder, vanilla and warm water in a large mixing bowl or food processor. Add in dry ingredients until well combined. Use a tablespoon to portion dough and roll into balls using your hands. Having a bowl of warm water to wet your palms makes forming these treats a breeze. Once formed, your can roll these energy bites in your toppings of choice (think dried coconut, crushed walnuts, or extra chocolate chips) and chill in the refrigerator for at least 30 minutes before serving.
