This whole food plant based appetizer stores well in the refrigerator for up to a week.

Air fried baby bell peppers give your left over moin moin a sweet, moist base for reheating. Serve with salad, rice & stew, plantains, or on it's own as a snack or appetizer.
Marinate your peppers before cooking!
Cut 12 mini bell peppers in half, lengthwise, marinate with olive oil, salt, powdered thyme, and pepper to taste. Refrigerate in a sealed container for at least 1 hour.

Once these are marinated go ahead and load them up with your leftover moin moin and pop them in your air fryer.

Searing the Beef
Sear beef fillets on high heat for 2 minutes per side to form a golden crust. Let it cool before proceeding to keep the beef tender.

Mushroom Duxelles
Cook the mushrooms until all moisture evaporates to prevent soggy pastry. Aim for a thick, paste-like consistency.

Puff Pastry Handling
Keep the puff pastry cold to avoid softness. Chill if it becomes too soft, and score the top lightly without cutting through.

Scoop and mash a tablespoon of cooked moin moin into each halved baby bell pepper. Your moin moin can be hot and fresh or refridgerated leftovers for this ste

Air fry at 350F for 10-15 minutes until lightly browned These can also be oven baked on a sheet pan at 375F for 20min.

Top with hot sauce, pepper stew and fresh herbs to serve.
Instructions
Quality Fresh 2 beef fillets ( approximately 14 ounces each )
Quality Olive oil
4 cups Chestnut Mushrooms
1 sprig fresh thyme
4 cups puff pastry
8 slices Parma ham
2 egg yolks
beaten with 1 tbsp water and a pinch of salt
Sea salt and freshly ground black pepper
Beef Wellington
2 tbsp olive oil
7 oz beef trimmings
4 large shallots ( peeled and sliced )
12 black peppercorns
1 bay leaf
1 sprig fresh thyme
Splash of red wine vinegar
3 cups red wine
3 cups beef stock
Red Wine Sauce
