Moin Moin Mini Peppers

Whole food plant based appetizers that store well in the refrigerator for up to a week.

Air fried baby bell peppers give Moin Moin a sweet, moist base to cook this savory side dish. Serve with salad, rice & stew, plantains, or on it's own as a snack or appetizer.


 

Ingredients:

  • 12 or more baby bell peppers, halved and seeded

Moin Moin ingredients -

  • 1 cup peeled beans (soaked overnight, rinsed & strained)

  • 1/2 small onion

  • 1 large red bell pepper

  • 1 habanero pepper

  • 1 teaspoon of bouillon

  • 1 1/4 cup water

  • 2 teaspoons of salt

  • 2 tablespoons palm oil + 3 tablespoons canola oil


 

Prep in advance:

*Measure 1 cup of dry peeled beans and soak in water overnight*

Cut 12 mini bell peppers in half, lengthwise, marinate with olive oil, salt, powdered thyme, and pepper to taste. Refrigerate in a sealed container for at least 1 hour.


Instructions:

  • Blend Moin Moin ingredients until smooth: chopped onion, pepper, strained beans, bouillon, salt, and water

  • Pour puree into a large bowl and mix in palm/vegetable oil

  • Scoop a tablespoon of Moin Moin mix into each baby bell pepper

  • Air fry at 350F for 20-25min until Moin Moin is well formed (toothpick will come out clean)

  • These can also be oven baked on a sheet pan at 375F for 30min

  • Top with hot sauce and fresh herbs to serve
