Banana Oat Cookies

These treats are dairy free and only require a few ingredients. If you have a few ripe bananas, give these a try!

Chocolate chip oat cookies

Rolled oats contain fiber along with key nutrients and minerals, and serve as the base of these cookies. These are best made with very ripe spotted bananas to provide sweetness without the need for added sugar. Dairy-free semi sweet chocolate chips are the topping of choice, but plenty of room for creativity to add to this simple recipe.

Ingredients:

  • 3 ripe bananas

  • 1/2 teaspoon vanilla

  • 1 pinch of each: salt, ground cinnamon, ground ginger

  • optional: 1 tablespoon brown sugar

  • 2 1/2 cups rolled oats

  • 1/4 cup chocolate chip


Directions:

  • Mash bananas

  • Add vanilla, spices, and oats. Mix until well combined.

  • Mix in half of the chocolate chips

  • Scoop & lightly press batter onto parchment paper (makes 2 dozen tablespoon sized cookies)

  • Top cookies with remaining chocolate

  • Bake at 350F for 15 minutes
